This is a good time to use fruit that is plentiful in certain areas, to make delicious receipes that all the family will love. We have two for banana bread and one for mangoes. Enjoy!

Christmas Banana Bread

Ingredients of Christmas Pudding:-

* 1 cup whole macadamia nuts, divided
* 1/2 cup butter, softened
* 1 cup sugar
* 2 eggs
* 1 1/2 cups all-purpose flour
* 1 teaspoon baking soda
* 1/4 teaspoon salt
* 1 cup mashed ripe bananas
* 1/2 cup raisins
* 1/2 cup flaked coconut

Instructions:-

1. In a food processor or blender, process 1/2 cup macadamia nuts until ground; set aside. Chop remaining nuts; set aside. In a mixing bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Combine the flour, baking soda, salt and ground nuts; stir into creamed mixture until just moist. Fold in bananas, raisins, coconut and chopped nuts

2. Pour into a greased 9" x 5". x 3". loaf pan. Bake at 350F F for 65-70 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pan to a wire rack.

Choc Chip Banana Bread

* 1 cup shortening
* 2 cups white sugar
* 2 eggs
* 2 tablespoons mayonnaise
* 6 very ripe bananas, mashed
* 3 cups all-purpose flour
* 1/2 teaspoon salt
* 1 teaspoon baking powder
* 2 teaspoons baking soda
* 1 cup semi-sweet chocolate chips
* 1/2 cup chopped walnuts

Instructions:-

1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease two 9×5 inch loaf pans.

2. In a large bowl, cream together the shortening and sugar until light and fluffy. Stir in the eggs one at a time, beating well with each addition. Stir in the mayonnaise and bananas. Stir together the flour, salt, baking powder and baking soda. Blend the flour mixture into the banana mixture; stir just enough to evenly combine. Fold in the chocolate chips and walnuts.

3. Bake at 350 degrees F (175 degrees C) until a toothpick inserted into the center of the loaf comes out clean, about 50 to 75 minutes. Cool loaf in the pan for 20 minutes before removing to a wire rack to cool completely.
 
 

Christmas Mango Ice Cream

Ingredients
2 mangoes
1/2 cup slivered almonds
2 litres vanilla ice-cream
3/4 cup (150g) mixed dried fruit

Method

1. Create 2cm mango cubes, using the mango 'hedgehog'
method:
• Hold the mango upright with the stem end facing upwards
• Using a sharp knife, slice off the mango cheeks one at a
time by cutting downwards either side of the stem, as
close to the stone as possible
• Score three or four lines vertically (be careful not to cut
through the skin itself) and three or four lines horizontally
to form a hatch pattern
• Firmly hold both edges of the cheek and turn it inside out
to form a ‘hedgehog’ shape
• Slice the mango away from the skin using a sharp knife to
create mango cubes
2. Place the almonds in a small saucepan, stir over high heat
until golden brown, cool.
3. Soften the ice-cream enough to stir in the dried fruit and
almonds, then gently stir in the mango. Return to the freezer.

Christmas Candy

1 pound (468 gms) white chocolate
1 cup small pretzels, broken into small pieces
1 cup pecans, chopped

Melt the chocolate. Stir the pretzels and pecans into chocolate and drop by teaspoon onto waxed paper. Handy edible gift suggestion.
